Cucumber salad

From Murph's father:

Slice onions, separate into rings, soak in salt water and vinegar for an hour.
Proportions?  Um, yes, in some proportion.
(salt water and vinegar is aka pickle juice)
Might add a minced garlic
Add sliced cukes, soak for 15 minutes.
Drain
Mix with sour cream or yogurt, dill weed.
Serve cold
Times are adjustable.
Goes very well on boiled potatoes.

The way I made it:

  • One half small onion, sliced, separated into rings (all we had - needed more onion)
  • One clove garlic, minced
  • Soak in equal parts white vinegar and salt water for 60 minutes
  • Slice two large cucumbers and add to onions, soak 15 minutes more (add more vinegar/salt water - cukes were large enough I was using 2 cups each, and barely covering)
  • Drain
  • Add 2/3 quart whole milk plain yogurt, a reasonable amount of dill (2 Tbsp?), stir to coat, chill until serving.

Was liked pretty well by the Jorvikers.
