Wedding Wheat Beer

Derived from the Strong Honey Wheat on the Beer Recipator.
One of four beers served at our wedding (along with a brown ale, ESB, and ... can't remember the fourth), the first batch of this was easily my favorite batch of homebrew so far. Also the most expensive. Oh well. I also don't remember the exact ingredients from the first time, but it was probably very close to this second time.
- 2 lb crushed american crystal 20L (steep 30 mins)
- 7.5 lb dry wheat malt extract
- 1.0 oz leaf Saaz (60 min)
- 1.0 oz leaf Tettnanger (60 min)
- 0.5 oz leaf Saaz (15 min)
- 0.5 oz leaf Saaz (aroma)
- 12 oz honey
The first batch used, I believe, Trader Joe's brand honey. The second batch used buckwheat honey purchased on a front porch on the 400 block of Fifth Street in Ann Arbor. (Assorted jars and cashbox on a table. Take your honey, leave your money...) I dig the buckwheat honey - it's dark and musty and awesome. Michael took one taste and spat it out. We'll see what it does in a honey wheat.
Third batch, brewed Nov. 4, 2007
- 2lb crushed american crystal 20L (steep 30 mins @160F)
- 7.5 lb dry wheat malt extract
- 1.0 oz leaf Fuggles (60 min)
- 0.75 oz pellet Tettnanger (60 min)
- 0.75 oz pellet Tettnanger (10 min)
- 0.5 oz pellet Tettnanger (aroma)
- 12 oz honey
Hops used were the closest I had leftover / available at U-Brew; honey was half leftover buckwheat honey (which, ps, turned out very well last time), half clover honey from Ypsi Farmers' Market.
Initial Gravity - 1.066.
